For those who know me, I have always been a YES person and always willing to volunteer and help out where ever I was needed. My friends were always telling me that I needed to learn to say "NO", because I was so busy, but I have also been someone who likes to keep busy! So, with that said, I decided that this year I was going to say no to volunteering in my kids schools, and do the things that I have wanted to do for a long time.
I am going back to school, after 20 years for my Bachelor's in Science for Science Nutrition. I would like to work with families who's kids are Diabetic, teaching them about nutrition, menu planning and even cooking for the families "to go meals" from the Children's Diabetic Cookbook that I am in the process of writing (and testing recipes) as well.
I decided that since I had Gestational Diabetes with both pregnancies, Diabetes runs on both sides of my family and I was told that I have an 80% chance of developing diabetes myself, that I should understand diabetes better. The motivation for me to do this now, was when I took my kids, 13 and 11 for their yearly checkups, the Doctor said that my kids are heavy and he wanted blood tests done and he wanted to see them in 6 months to see where their weight will be. I knew I needed to change a few things in my life for their sake!
I look forward to developing my blog in many ways and take you through my journey.

ReplyDeleteYour blog got me thinking about how family medical history is important, but we always forget family history, in general.
What do you think about tracking the activity level (and diet) in recent family history and compare that to long-term health? I think that would help me some.
As you know, we lost a dear family friend this week. She was known for a poor diet and was able to loose weight, only to gain it back.

Yes, we do need to look at our history and take that into consideration! BUT history can be changed! We need to look at the food we love and see if there are ways to make the foods healthier, if they are not so good for us, instead of giving them up altogether, because that isn't always realistic! Since diabetes runs in our family, does it mean that WE are predetermined to get it OR is there something that we can do now with diet and exercise that will change history?
ReplyDeleteI know as a mom it is hard to take care of ourselves when we are always putting family and career ahead of our bodies and minds, but it is really important to remind ourselves that we are very important to our selves and to our loved ones! So, take deep breathes, eat healthy and exercise! (We should feel good about ourselves) Get a manicure, a massage or have a girls night out. Surprise your husband with a date night ~ maybe it is just going out for a glass of wine. Do something at least once a week for you! Being stressed out all of the time isn't healthy, and that itself can cause health problems, so find what works for you, and relax! I love your quote, "If food is love, activity is life"!

ReplyDeleteIs it for the kidos too? A pasta dish with veggies and either a pesto or herbed olive oil, sprinkled with really good parm/regiano cheese. Grilled chicken ( I always marinate my chicken in buttermilk or fat free Ranch salad dressing for at least 2 days) on top of a mexican salad with corn, avocado, black beans, tomatoes, black olives etc. for the dressing mix 1 TBSP fat free sour cream with 1 cup Salsa and top with cheddar cheese and tortila strips, if you can't find the strips (sometimes they are with the salad toppings) you can use chips. You could do a chef salad with different choices of meats, cheese, hard boiled egg, colorful veggies and beans. If you want to do more finger type foods, you could do stuffed mushrooms ( you can use the food processor to finely chop up spinach and any other veggies you want), deviled eggs, raw veggies with hummus dip and fresh fruit. If it is going to be chilly outside, you can do a chicken and dumpling stew, beef stew or vegetarian chili with a lowfat cornbread. There is a company called Frontier~ 100% Natural Hearty Meals and they do great soup/stew mixes that are Gluten free. Let me know if any of these ideas look interesting, and if not, I can probably come up with a few more. I do have a really good crock pot mexican shredded chicken dish that can be served in tortillas, or the little scoops tortilla chips~ and the kids really like it! What kind of food where you thinking?
